Healthy Sloppy Joes Recipe

Getting a Sloppy Joe before breakfast makes The Husband happy

Tonight for dinner we are eating sloppy joes. This recipe is not completely clean, though I still think it is healthy. And it is very versatile, change it up any way you want!

First I started with some veggies, diced up (except the carrot, which was shredded). I used onion (this should be a large onion. I forgot to buy them, and only had one small one left in the pantry. oops!), red pepper, celery, garlic, and carrot. This is easy to change as you desire. Add more veggies, cut some out completely, change the red pepper for green, use onion or garlic powder instead of fresh. I just looked in my fridge and used what I had on hand.

In a large skillet I melted a tsp or so of coconut oil,
