Healthy Sloppy Joes Recipe

Tonight for dinner we are eating sloppy joes. This recipe is not completely clean, though I still think it is healthy. And it is very versatile, change it up any way you want!

First I started with some veggies, diced up (except the carrot, which was shredded). I used onion (this should be a large onion. I forgot to buy them, and only had one small one left in the pantry. oops!), red pepper, celery, garlic, and carrot. This is easy to change as you desire. Add more veggies, cut some out completely, change the red pepper for green, use onion or garlic powder instead of fresh. I just looked in my fridge and used what I had on hand. :)

In a large skillet I melted a tsp or so of coconut oil,

and cooked the veggies on medium heat  for about 5 minutes, until they started to get soft.

Mix and soften the vegetables

Then I added 2 lb of lean ground beef. Ground turkey or chicken also works well. Break it up and cook until completely browned. Then drain and rinse (I always drain and rinse the grease off, it just makes it “feel” healthier.) I have also (in the past) used 1 lb of ground beef, then added 2 cups of cooked brown rice after rinsing the grease off. Put it back in the pan. Mix together 1 large can tomato sauce, 2 Tbsp cornstarch, 1 Tbsp honey, and 1 tsp sea salt.

Add the sauce mixture to the pan, along with salt and pepper to taste,  a large squirt of ketchup (make sure it has no high fructose corn syrup!), a medium squirt of mustard, a couple dashes of worcestershire sauce, 1/4 cup of brown sugar, and 1/4 cup of water or broth (I used chicken broth since I had some open in the fridge). Mix well and simmer on low until it thickens up.  At this point I always taste it. I sometimes need to adjust the ketchup and/or mustard.

And that’s it!

Once ingredients are mixed, taste and adjust flavor accordingly

Serve it on some whole wheat hamburger buns. I used a Sandwich Thin, because that is what I had. These sloppy joes are packed with veggies, and are SO much healthier than a can of Manwich. They taste a lot better too!

Healthy Sloppy Joes Recipe

1 large onion, diced
2 large cloves of garlic, minced
1 bell pepper, diced
2 carrots, shredded
2 celery stalks, diced finely
2 lb ground beef
15 oz tomato sauce
2 Tbsp cornstarch
1 Tbsp honey
1 tsp sea salt, plus more to taste
pepper to taste
worcestershire sauce
1/4 c brown sugar
1/4 c water or broth
Cook the veggies in a bit of oil on medium heat. Add beef and brown. Drain and rinse, return to pan.
Mix together the tomato sauce, cornstarch, honey, and 1 tsp salt. Add to pan of beef and veggies.
Also add to pan 1 large squirt of ketchup, a medium squirt of mustard, salt and pepper to taste, a couple dashes worcestershire, brown sugar, and water OR broth.
Simmer on med-low for 5 minutes or so until thickened. Taste and adjust seasonings as needed.

Enjoy with some fantastic roasted sweet potatoes!
