Because my life is crazy, this is going to be a post minus photos. Go ahead and thank me. I know that I am not so great in the photography department.

I have begun making greek yogurt in a crock pot. I love it. It is so much cheaper, and so much healthier. Now if I could just find a local dairy farm it would be even better. Anyone in Southern MN have any ideas for me?

With it being made in the crock pot, there really is hardly any work at all. It takes about 10 minutes of actual work time. Maybe less. The crock pot portion spans many hours, though. Crazy Time!

Crazy Time!

You probably noticed that I was missing Thursday and Friday last week. Let me tell you. The end of the school year is a crazy time. Between school concerts, and preschool graduations, and family picnic lunch at school, and piano recitals to prepare for I feel like I’m losing my mind a bit. And to all that, I have to add the yard work that comes with spring, and the kids playing outside and bringing dirt and mud into my house. I’ve been so exhausted and overwhelmed. There just is not enough time in the day.

I’m trying to stay motivated. Each day I have been cutting out a couple things that “should” get done, so that I have time to work out. Thursday and Friday that was this blog. I’m back today, but I can’t promise you anything about the rest of

Stacked Roasted Vegetable Enchiladas – Pinterest Recipe Review

If you had put this recipe in front of me 8 years ago, I wouldn’t have touched it. Onions? ew. Spinach? double ew. Peppers? extra ew. Thankfully, The Husband got me to try these things, and I have come to love them.

Which is part of why I loved this meal so much.

Here’s how I did it:

First get those vegetables out!

Next, I cut up lots of veggies. Cauliflower, red bell peppers, a poblano pepper, an onion, a small sweet potato, and some frozen corn. (The corn was picked, shucked, blanched, cut, and frozen last fall by a good friend and myself. It is so good!) I put them on a couple of baking sheets, drizzled them with oil, then seasoned them. The recipe says to mix them up at this point. I forgot. Into the oven they went.

This is a very hard post for me to write. It’s time for me to be honest, and hope that you don’t stop reading. I was doing so well, until this last week. I was working out 6 days a week, and being very careful with my diet, until this last week. It’s hard, people, to be good all the time!

Between my birthday (when I took the day off), then The Husband’s birthday (again, off day) and then my anniversary (once again, off day) I was setting up some pretty bad patterns. I think I would have been fine if it was just one of those days, but having all three right in a row was bad for me. It made it so much easier to compromise on all the other days.

I realized this morning that the workouts I have been posting about are mostly pretty intense, high impact ones. Because that is where I am at right now. I want it to be hard! I want to feel like Jello when I’m done, and I want to be sore the next day. I may not be able to “see” my results, but I at least want to feel them!

Juicer Bloody Marys – Pinterest Recipe Review

I want to start this post off with a bit of an update. Last week I posted about water. I was looking for solutions on how to drink more of it. Remember? Sure you do!

So I was at Walmart over the weekend and I found this cup for $5. I had a bit of leftover birthday money, so I bought it. And… I LOVE IT! I easily refill it 3 or 4 times a day. That’s a lot of water, people! I love that I only have to do it 3 or 4 times, it is much more convenient for me than having to refill after every 10 oz, like before. I have to tell you that I am so excited to be a part of this Pinterest Post Party! I’ve been talking about it for days!!!

I think The Husband thinks I’m a bit nuts. I Love him dearly (Happy Anniversary Honey!) and he is great at the tech stuff (imagine words like traffic, code, monetization, analytics, etc – fun, right? ) But, he keeps saying things like “what are you getting for doing it?” um.
